My Favourite Summer Fruit Porridge Recipe
Summer food is amazing isn’t it? So many fresh fruits and veg available and the breakfast choices seem endless.. I thought I’d share with you one of my favourites for those times when you need a bit more than a smoothie to get you through the day. It’s so easy and with the addition of the summer fruit there’s no sugar or sweeteners needed.
Ingredients (do your body a favour and go organic):
1/2 cup rolled oats
1 tablespoon almond meal
1 teaspoon coconut oil
1 teaspoon seeds – chia, flax, pumpkin.. take your pick
2 tablespoons blueberries (I use frozen organic blueberries – so much more flavour than ordinary blueberries and worth the extra expense)
1 small peach
coconut to sprinkle on top
Add oats, almond meal, coconut oil, seeds and blueberries to a bowl. Add boiling water – don’t quite cover, it needs to be enough to saturate the oats but you don’t want too much. If in doubt you can always add some more later. Leave to soak for 5 minutes. Chop up the peach, add to the oats mixture and stir. Sprinkle on some coconut and enjoy!
You can vary this recipe with whatever fruit you like – mango, kiwi fruit, banana – 1/2 grated apple is also one of my favourites, especially in winter. Try adding cinnamon for some extra flavour, it’s great for helping with sugar cravings too.
