I’m a little bit obsessed with pineapple – ok, ok VERY obsessed – and coconut too, and coconut and pineapple together.
Is there a better match made in heaven? I’d like to hear about it if there is.
A Pina Colada is apparently the official drink of Puerto Rico, and it has tropical paradise written all over it.
After much delicious experimenting, I have come up with a few of my favourite versions.
These are all virgin coladas or mocktails.. if you’re celebrating and would prefer some kick, add white Rum!
* Just a little note about the coconut milk.. some brands are stronger than others so if you’re not so crash hot about strong coconut flavour then try first with half the amount then add more to taste.
You can also use coconut cream – just use less as it’s more concentrated.
Peachy Pink Pina Colada
2 cups pineapple juice – you can add some fresh pineapple too if you like.
1/2 cup organic coconut milk
1 peach
A dash of pomegranate juice (if you want it to be a rosy colour)
1 cup ice
Banana Pina Colada
1 ripe banana, preferably frozen
2 cups pineapple juice
1/2 cup organic coconut milk
1 cup ice
Berry Pina Colada
1/2 cup Blueberries
2 cups pineapple juice
1/2 cup organic coconut milk
1 cup ice
Combine all except the ice and blend until smooth. Add the ice a pulse until crushed.
Take a sip and pretend you’re in a warm tropical paradise by the sea.. Enjoy!
