It’s the end of the Summer season, and that means cooler nights and shorter days – but don’t despair – Mangoes are cheap!
I bought a few and have been wanting to get more chia in my life so what better way with a blitzed mango and coconut milk? Best breakfast or snack around. Mangoes can be a bit sweet and when it was all mixed up I thought it could do with a lift, and lime juice worked wonders. It gives it a beautiful zing and strangely makes it taste a bit like passion fruit too! To. Die. For.
1 large mango, peeled and chopped
juice from 1/2 lime
1 small tin coconut milk (165-200ml)
2 tablespoons chia seeds – black or white.
Put mango, lime juice and coconut cream into a blender. Blend until really smooth or leave it with a few chunks of mango, it’s up to you!
Add chia seeds, stirring well as they form clumps quickly.
Refrigerate for a few hours or overnight.
I like to put some in small jars or containers as a ready to go snack, or have it for breakfast with chopped seasonal fruit.
